505 Southwestern began in 1997 when Albuquerque restaurateur Roy Solomon started bottling and selling his popular recipes, which feature flame-roasted Hatch Valley green chile—the 505 name honors the Albuquerque area code. The brand has since grown dramatically to become the leading nationally distributed jarred green chile and a highly recognized name for sauces and salsas across the country, particularly in Colorado.

The founder of Santiago's Mexican Restaurant, Carmen Morales, began selling her mother Rachel's authentic green chile with pork recipe from her first Brighton location in 1991.
